Lunch Salad in a Jar

Eating a protein and nutrient packed meal to start the day is one of the most powerful shifts you can make for your health. Here is one of my best solutions…Salad in a Jar.

Salad in a Jar is a great way to make ahead a delicious and nutrient dense lunch.

I don’t have a lot of time to think through meals. That’s one of the reasons I do a lot of prepping. If I had to plan out a menu day after day I would quickly become very discouraged…and this is from the person who is promoting herself as a food lover and healthy eater.

My regular day starts at about 5:30 AM with exercise, meditation, shower, get ready for school, commute to work and home, prep food for tomorrow, then go to a rehearsal of one sort or another and bed. On the weekends it is not much different, I typically am up early and out the door and helping my family with babysitting or something else. Because I live in the real world of work, family, commitments and also want to live my best life - I know without a doubt that eating right is the #1 way I can show up for myself.

If you know anything about me you know that I have FOMO and want to be too many places at one time. This has always been true! I suppose that singular truth has helped me to develop a few tricks when it comes to my health and wellness.

12 years ago I was diagnosed with a compound form of Lymphoma and over the next 5 years I battled for my life. in the 7 years since then I have been living a much healthier existence and am so grateful for the 2nd chance I have been given. From that time till this I have spent a lot of time honing my skills at developing efficient, economic, and healthy solutions to healthy eating and living.

This year - I have developed the “Salad in a Jar”. I would say that it’s been the last 6 months primarily that it has become THE staple in my daily lunch bag. Admittedly, I may enjoy salad more than the average person…but I also think I make the most delicious salad dressings…which quite honestly take the salad to the next level.

Please check out my yummy salad dressings. I guarantee you - you will eat a lot more greens and healthy things if you LOVE them. And you will LOVE them if they taste amazing.

The Salad in a Jar is simply filled so that whatever you put in there other than the lettuce goes in first, the dressing too -and then the lettuce/greens get packed in on top, that way when you dump them into your big bowl at lunch all that goodness ends up on top and pours over the lettuce!

My lunch for tomorrow is pictured above!

Here is what it has:

  • pulled chicken

  • cucumber

  • avocado

  • banana peppers

  • olives

  • strawberries

  • a boiled egg

  • peanut sauce/dressing

  • greens (a mix of spring greens and spinach)

I keep a big bowl to dump my Salad in a Jar into at school that I use day after day. It is much more satisfying to eat out of than a dinky little bowl or worse yet trying to eat it out of the jar itself. The jar is just for transportation.
